Chocolate Truffles - Marmalade, Pecan, Baileys and Malibu
I find that every once or twice a year I get a serious chocolate craving and when this happens, the only thing that can satisfy me are chocolate truffles. This year I wanted more than just a butter chocolate truffle, and so went about making marmalade, pecan, Baileys and Malibu flavoured truffles
Caramel Popcorn and Pecan Choc Chip Cookies
These cookies are wonderfully chewy while the caramel popcorn and pecans in the filling provide plenty of crunch.
Chestnut Picking at Kookootonga Farm
The Kookootonga farm is located just to the north west of Sydney and takes about 2 and a half hours to drive there from Sydney central. After the last of the city's suburbs zoom past, you will find yourself suddenly driving in a lush and fertile countryside. The once harsh road full of pot holes, exhaust and noise now undulates in a lazy line over, under and between the folds of this mountainous region. The landscape seems to slowly unravel its secrets as you plunge into serene sections of forest and emerge into vistas of vibrant autumnal colours. Once off Bells Line of Road, which leads to Lithgow, the road narrows to a single lane and takes you over Mount Wilson, before bringing you to Mount Irvine, where the Farm lies.
Sri Lankan Chicken Biryani
While living away from home, back in 2010, I developed a really bad craving for proper biryani. I missed the spices, heat and fragrance found in good indian food and so I set off to cook my own dish.
The recipe I provide here does not have quantities shown as I'm the sort of cook who judges by eye, taste and smell.
